Denomination: Barolo Chinato
Organoleptic Characteristics: aromatized wine with an alcoholic scent, in which, in addition to China Calissaja, a mix of green officinal herbs stands out. Gentian, rhubarb and cardamom also crown the bergamot and Chinese pepper. Velvety and very soft flavor with great body, notes of bitter almond mix with fresh marzipan.
Alcohol content : 16%
Color: garnet red with purple reflections.
Wine: produced with Barolo DOCG obtained from a careful selection of the best bunches of Nebbiolo grapes ripened in the estate vineyards in Località Bergera in Novello, notoriously known for being one of the most prestigious crus in the area. The production is the result of a scrupulous separate vinification and a “traditional” aging of at least three years in medium-large Slavonian oak barrels.
Preparation: the extracts obtained from a separate infusion in alcohol of China Calissaja bark, Quasso wood, Gentian root, Cardamom seeds, Juniper berries, Tonca bean, Mace, Chamomile and other natural aromas are combined with the Barolo and placed for approximately six months in small French oak barrels to achieve the right balance between the different components.
