Grapes: 100% Cortese
Organoleptic Characteristics: still white wine with an intense straw color. On the nose it presents notes of citrus and yellow peach, with hints of tropical fruit and a herbaceous finish. In the mouth it is pleasantly fresh, intense, velvety and persistent.
Vineyard : 25 years old, located in Rovereto in the municipality of Gavi, at an altitude of 430 m above sea level
Soil: calcareous - clayey.
Exposure: south, south-west.
Training system: classic guyot.
Production: 95 quintals/ha.
Vinification: after crushing, destemming and pressing, the must is transferred into stainless steel tanks, where pure fermentation takes place at a controlled temperature of 18° for 15/20 days.
Aging: in steel tanks for approximately 6 months, with batonnage every 10 days to increase its complexity, then in bottle for a minimum of 3 months to refine.
