Organoleptic Characteristics: complex wine, but soft and elegant. The color appears garnet with purple reflections. Hints of violet, dog rose, cassis stand out on the nose. In the mouth it remains very harmonious, although embellished with evident tannins and characterized by a long finish.
Vineyard : 30 years old, located in the municipalities of Montà, between 280 and 320 m above sea level
Soil: very sandy.
Exposure: south-west.
Training system: classic guyot.
Production: 100 quintals/ha.
Vinification: after a cold maceration of the grapes in crates for 5 days, the vinification is carried out in steel tanks with the emerged cap system for 7 days. The fermentation temperature is controlled and maintained at around 25°C. Malolactic fermentation takes place at the end of fermentation and racking.
Aging: matures for 4 months in steel tanks, then refines for 6 months in Tonneaux and finally 2 months in the bottle.
